I also dont think that the baking time line you give is accurate because after 30 minutes at 250 my wings didnt look like they were cooking , so I added more time, and at the end of the process the wings were dry. I love the result, but not the process. Just make sure the wings are spaced out with room for the hot air in the oven to circulate around each one.

Some people are highly sensitive to the taste of baking powder. Use 10 wings, dont cut them and use the same amount of baking powder and salt as listed in the recipe. They always come out crispy on the outside and juicy on the inside.
